Alfajores

Baba is gone for a few days so is just the nenes and me.  Is amazing but not having him home takes allot from mami I have to make sure they are busy and enjoy their day so today we took on baking...I wanted the girls to taste alfajores every time el nono would go to Argentina he would bring that for me and I love them even when I used to live in New York they would mail them just for me.  (Funny thing while I am typing this and searching on alfajores I learn they come from Arab cuisine how funny can that be...)


So after I decided that the girls have to taste them I decided to make them I look around for some recipes I took a few of here and there to come up with this:

1 stick of butter
½ cup sugar
2 cups  flour
1 cup cornstarch

1 whole egg
3 egg yolks
1 tsp vanilla extract
2 Tbs of a sweet liquor
1 tsp freshly grated lemon zest

a pinch of salt
½ tsp baking soda
1 tsp baking powder
¾ cup grated coconut
dulce de leche

 
- First beat the butter and sugar once they are fluffy completely mix the egg mix well and then add the egg yolks.
-  To this mix add the vanilla, the liquor and the lemon.
- Put this wet mixture to the side
- On another container mix all the dry ingredients once they all mixed incorporate this to the wet ingredients and mix with your hands till the dough is soft.
-Put in the refrigerator for about an 1 hour
-Then take the dough out and roll it to about 1/4 of an inch high, then you can use a cookie cutter and make big or mini.
-Bake them at 325 F for about 12 minutes
-Let them cool off and then add the dulce de leche.

The nenas help me all along the way, they help me putting the cookies in the trays, they count them and then they help me fill them with dulce de leche, it took a while but it was so worth it they enjoy doing it and I was able to keep them busy for a while.
