Paella Mistika way

I had to admit one of the things I really enjoy from living here in Thibodaux is the amounts of fresh seafood, I love going to the supermarket and finding fresh live shrimp, so the other day I decided to make a Paella.  I know I did not make it exaclty the Spaniard style but it was great and my whole family loved it.


Ingredients

1 filet of chicken
1 bag of small scallops I got  them frozen
2 pounds of shrimp
2 medium tomatoes
1 medium onion
1 medium red pepper
3 cloves of garlic
2 cups of rice
2 cans of chicken stock
peas

olive oil
salt 
pepper
turmenic


I cut the chicken in pieces  in the pan brown with olive oil put a pinch of turmenic and some salt and pepper.


While this brown cut the tomatoes, onions, red pepper and garlic.


When the chicken is ready put in a dish.


In the same pan with olive oil salt and pepper brown the scallops


 
Clean the shrimp take the head off and brown them as well with olive oil salt and pepper.

After all the meats are cooked now mix the tomato, onions, pepper and garlic with salt and pepper and some red chilli to taste with olive oil and let it cook for a while.

In the mean while make the rice with the chicken stock and add some green peas towards the end.

Once the rice is done mix all the ingredients except the shrimp that you put in top.






Ready to eat

It looks so yummy! We love to make paella and moving near the Gulf has really helped with out seafood, too. Kind of love that aspect of it.
