Samia's Veal Parmigiana

Samia I hope you don't change but you love to cook with me and actually you being getting better at it.  You can distinguish very good about cooking salty food and sweets you know what we used depending the platter.

I had some veal in the fridge and for some reasons the girls love this meat I think the fact that is so soft is very appealing to them...so I opted to make some Veal Parmigiana and Samia was my right hand.

Veal
Olive oil
1 Egg
Parsley
Galleta molida which is breaded crumbs
Penne Pasta
Tomato Sauce 
Salt
Oregano
Cheese mix for pizza

I take one egg and beat it add some salt and oregano then put the veal and let in there for about 30 minutes.

Then take  your bread crumbs I love the Spanish brand because they are not big crumbs but instead very thin, you can also take a french bread and let it go stale and then rallarlo

Then take the veal and cover it with the crumbs before that take a tray and put some olive oil and then put the veal after you have them all put some olive oil in top of them as well.

Put it in the oven at 350 F 15 minutes in each side.  While this is cooking take the penne and put it to a boil.

Once the penne is cooked take it out, in the same  pot put some tomato sauce, oregano and salt let it boil for a while then mix the penne with the sauce. Make sure to leave a bit of sauce to spread over the veal

By this time the veal should be ready.  Take the penne put it in a Pyrex and in top put the veal at this time add some of the leftover sauce and the parsley.  Also put some of the cheese and back in the oven at 200F for about 10 minutes and wallah ready to eat.

Basboussa, Haressa or Semolina cake

Last week before our trip Zetu made Basbussa or haressa in Cairo they call it Haressa but in Alexandria they call it Basboussa, nenas you love it and baba can eat it none stop.  Is very tasty just perfect and super easy to make.




1 Bag of Semolina (I bought it at the arabic store)
2 Tablespoons of baking power
3 Tablespoons of butter
1 Cup of sugar
1 Cup of milk she used half and half
3 tablespoons of coconut


-In a container put the semolina with the baking powder
-Then in another container mix the butter with the sugar and cream it
-Then add the milk and mix it well
-After mix the wet ingredients with the dry ingredients and the coconut
-In a pan butter it well and put the mixture tap it down and afterwards cut it in squares like in the picture
-Put in the oven at 350 for about an hour


For the syrup or Sharbet


1 cup of sugar
1 cup of water
1/2 lemon


-Put everything in the fire in medium heat till it boils.


After the basboussa is taking out of the oven and the syrup is hot pour it over the basboussa let it cool off and ready to eat.

Random.... Bread pie and pitas

Here at home things are doing good the girls love spending time with Guido and Zetu.




And as you can imagine Zetu and Guido cook for them none stop make them cookies, bread patties and every single thing they ask for.


Having Zetu here I have learn many new things in the kitchen.


For instance the pita bread I finally learn to make it to perfection. First off all that oven has to be steaming hot.


Today we did a meat pie or like others would call it a Calzone.


Make the dough..for that I really have not measurements I just use 1 cup of regular flour and the rest wheat flour, she has teach me how to amazarlo the right way. I am hoping one day I can make a cook book with everything I have learn from her and give it to the girls. Nenas Abuela is not much of a cook, the kitchen scares her, however she is great in everything else around the house.




Meat pie


1 cup of white flour
3 cups of wheat flour
2 cups of warm water (nenas just pour one y amaza little by little if you need more add more)
1 envelope of yeast
4 tablespoons of olive oil


For the beef


1 pound of ground beef
2 small onions shredded
1 cup of parsley
salt and pepper to taste


Nenas Zetu mixes the flour in the middle she opens a little hole and she pours the olive oil.

Then she mixes the flour with the olive oil, once again leave a whole in the middle.

Then start adding the water and mixing little by little add the water to the point where the dough is not getting attach to the container.

On the side prepare the yeast once it has risen add it to the dough and mix and mix
Zetu teach me to take a piece and and stretch it and attach it to the container a bit higher than where the dough is.

Then cover it with a blanket and let it rise it has to pass the mark, once it does start put some flour in your hands and start making balls.

Then thin them out with a roll, fill them with the meat and close them.

Nenas this is the same way we make bread as well.

The meat pies at 550 in the oven take 13 minutes to get done.

The regular pita same 550 oven take 7 minutes to get done.

Brigadeiros or Beijinho de coco

So I was thinking today of my days in Miami and I remember when I used to work for a Brazilian company and the owner introduce me to this little sweet shop in coconut groove. They used to serve this little balls made out of chocolate or coconut so I decided to look and see how easy they were to make or if I could even be able to make them.  

Wallah to my surprise is super easy to make them.  I did not know that but apparently they are very famous in Brazil in children parties..so I guess I will be serving this in my next birthday party. Even to my surprise Samia was able to help me that is how easy they are.




This the last result, I added some pink and purple sugar and of course some with coconut.




AS you can see the ingredients are 


Can of condense milk
1 tablespoon of Butter
1/4 cup of coconut flakes.


Take the condense milk and the butter and put it in the stove in medium low for about 20 minutes, till you can see that is getting thick.


Once thick put aside and add the coconut.


Then take a plate and put some butter around it and add the mixture put in the refrigerator for about 2 hours.


Afterwards take some butter put in your hands and start making little balls and then pass them either to color sugar, coconut pretty much anything you like.


Afterwards put again in the refrigerator for a little while and then they are ready to be eaten...



And here is Amir I love this face his sisters were in top of him singing and talking none stop his face is like what the heck is going on crazy girls...yes nene get ready for those two they have so much energy..but they love you so much already I think at times they wish you were big so they can rough you up.

Party all around

So here we are a few days before Christmas I am so excited yesterday we had a little get together with our friends to exchange gifts drink some nice coffee and eat some Panetton there is no Christmas without it.  I think we have being eating this at home since I can remember nenas Abuela would always buy it and we would sit in the kitchen table and eat and eat...although I have to tell you nenas I always buy the plain one because mami does not care for the fruits inside of it, but I promise you guys next year I will buy one with fruits in case you guys like it.





Samia your friend Alexandra gave you a scooter and I think you have not gotten off that thing only to sleep and our friend Bonnie gave us this beautiful napkins with our names the girls love it and actually is a very thoughtful gift and awesome I love it.....







Today I decided to make some cookies some call it Mexican cookies but after I taste them they taste like the cookies Zetu makes for Eid....deliciosas we are going to be shipping them off to baba's work or else I will be in lots of trouble here is the recipe try it easy very easy and very very tasty and very very fatting.


2 Cups of flour
1 cup of butter

1/2 cup of sugar
1 tbs of vanilla extract
1/2 cups of chopped nuts (walnuts, pecans, or almond any of these)
powered sugar


I took the flour, sugar and butter I mixed it with my hands till I had like little balls.
Then take the nuts and mix them.
Make little balls
Put in the oven at 300 F for 30 minutes
take out let cool off 
Sprinkle with powerder sugar.
